Histamine intolerance is associated with a deficiency of the intestinal enzyme diamine oxidase (DAO) and high levels of histamine that cannot be metabolized. Histamine intolerance is established in: 1. Primary congenital deficiency of diamine oxidase with increased enteral absorption, serum concentration and systemic effects of histamine. 2. Secondary deficiency of diamine oxidase in acute or chronic gastroenteritis, lactose intolerance, gluten enteropathy, etc. 3. With a normally functioning DAO enzyme and an increased serum level of histamine due to excessively increased food intake or from increased endogenous synthesis in allergic reactions and mastocytosis. For the treatment of histamine intolerance, dietary nutrition, enzyme supplementation, and antihistamines are recommended. Application of an appropriate diet with low-histamine foods leads to relief of clinical symptoms.
